I shared this recipe recently on my online platforms (instagram and Facebook) and today I want to extend this to our blog readers. This is also the first blog post under the caption of my Bakers’ Corner series. Just save this recipe and try it out..
My Banana Cake Recipe:
Ingredients needed:
250g of Plain Flour
1 teaspoon of Foster Clark Baking Powder
Half teaspoon of Baking Soda (any good brand )
2 moderate sized ripe bananas
150g of Softened Butter or Margarine
150g of fine textured granulated sugar
1 teaspoon of Mild Vanilla flavour( fosterclark/rayners)
1 teaspoon of Mild Banana Flavour(fosterclark/rayners)
3 medium sized eggs
120ml of any rich liquid Milk good for baking
Procedure:
1) Sift flour 3 times….
Note- after the second round, add your baking powder and baking soda into the flour and sift for the last time and set aside.
2) Blend the bananas and some part of the liquid milk till smooth and keep the remaining
3) Put the sugar, softened butter or margarine , vanilla flavour, banana flavour and whisk with a mixer till its light and fluffy
4) Gradually beat in the eggs till it incorporates well in the mixture
5)Pour in the blended banana + milk into the the mixture
6) Then finally pour in your flour gradually…. Afterwards add the remaining milk
At this stage, your batter is ready…. You can now scoop the batter into your greased and lined cake pan/ cupcake liners inside the muffin tray and bake
Bake until it’s firm to touch …. For The dressing…. Serve with buttercream or whipped cream and you can add some toppings if you like.
Note – For those that don’t get along with excess cake sweetness…. You can also add 5 level tablespoons of Soured Cream in place of the liquid milk
